Beyond the real danger of uncontrollable flare-ups, flammable liquids soak into the charcoal and pass a fuel taste to the food. If your charcoal needs chemical «help» to catch, the problem is the charcoal — a dense, dry charcoal like slow-pyrolysis acacia lights with two firelighters and asks for nothing more.
The most common barbecue mistake: food on the grill while there is still flame. Flame burns the outside and leaves the inside raw. Grilling is done over embers — stable heat, no flames. The wait is worth gold.
With acacia biocharcoal, 15–20 minutes from lighting to ready embers (grey outside, orange inside, no flame). Damp or low-density charcoals can take much longer.
We never recommend it: it is dangerous and leaves a fuel taste in the food. Two natural firelighters and a well-built pyramid solve everything.
When the charcoal is covered in light ash outside and glowing orange inside, with no flame left. If there are still flames, it's not time yet.
